Avocado Tzatziki

Mediterranean cuisine has alway been one of my favorites ever since I first attend the Greek Fest held each year in New Orleans on Memorial Day weekend.  What draws me to this cuisine over and over again is the freshness and the healthiness of the my favorites--Greek salad, gyro, hummus, and Chicken Shawarma.

My other latest obsession is avocados.  The health benefits of the tasty green fruits are just a bonus to the great taste.  I've combines two of my favorites in this recipes which marvelous results! Don't be shy if you wish to add more avocado!

Avocado Tzatziki

1/2 or large avocado
1 cup Greek yogurt
1 large cucumber, pealed, seeded and chopped
Juice of half a lemon
2 small garlic cloves
1 1/2 tablespoons fresh dill or 1/2 teaspoon dried dill
3 tablespoons extra virgin olive oil
kosher or pink salt and pepper to taste

Place all ingredients in a food processor.* Blend ingredients until smooth and creamy.  If necessary, add a little more olive oil to create a creamy texture.

*If you do not have a food processor:

  1. Finely chop the garlic, dill and seeded cucumber.
  2. Mash avocado well with a fork.
  3. Blend all ingredients in a bowl.

Serve immediately or refrigerate for one hour to allow flavors to develop.  Refrigerate leftovers (if you actually have any)!

Try this Tzatziki sauce with my Greek Chicken Meatballs

and Chicken Meatball Gyro Lettuce Wraps.
