The Easiest Filipino Pancit Noodles


   Asian noodles are one of my favorite foods so when I recently came across Pancit, it sounded like a dish that is right up my alley.  I happened to have all of the ingredients on hand (more or less) and I decided that Saturday lunch was a great time to try it.  I had been craving Asian food but just hadn't had a chance to get out to a restaurant.  I also hate delivery.  It is never as good when it is delayed.

    As far as the recipe, I read a recipe which used Italian vermicelli noodles and this tipped me off that it probably wasn't a very authentic recipe (not that mine in either).  As usual, I did my research on Youtube Shorts, I found lots of recipes, many which are their grandmother's recipe which spells out "Comfort Food!" I found out that Pancit is available in many forms, with many recipes using bihon noodles.  I had little bundles of thin rice noodles so that is what I used.  Another main ingredients that most recipes use is snow peas.  I had fresh green beans which I used instead, but sliced them lengthwise.  

As far ingredients, most recipes use these ingredients:

  • noodles
  • onion
  • garlic
  • snow peas
  • carrots
  • celery
  • protein of your choice
  • Soy sauce, both regular and dark soy
  • Oyster sauce
  • chicken bouillon powder
  • Chicken broth or water

    I have noticed in some recipes, people use bell pepper, green beans and even sliced chayote.  Use your favorites or whatever you have.  

    The only thing I did different that I noticed from other videos is the way I cooked my chicken.  Most videos add cooked chicken.  In mine, I browned the chicken first in a little olive oil to get that nice color and flavor from the pan.  Then I added onions first.  Many videos have people adding garlic first which tends to burn and give a bitter flavor.



Note:  This recipe is very forgiving.  If you don't have oyster sauce or chicken bouillon, you can just use soy sauce and it will still be good.  This recipe reminds me of fried rice without the eggs.  However, if you are looking for more protein, adding eggs is a great addition!

FYI:  I made a short video of me making this for the first time.  I didn't measure anything in the video and ended up with way too much sauce for the amount of noodles and veggies, but it was a happy accident since I strained the extra sauce into a jar to use for marinades or future stir fry.

Easy Pancit Noodles with Chicken


Ingredients

  • 2-3 tablespoons olive oil (or oil of your choice)
  • 2 chicken breasts, thinly sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, chopped
  • 2 stalks celery, juliened
  • 2 large carrots, juliened
  • 1 cup fresh green beans, sliced lengthwise
  • 1 cup fresh cabbage, sliced
  • 1 cup water
  • 1 or 2 chicken bouillon cubes (optional)
  • 1 tablespoon oyster sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon soy sauce
  • Salt and pepper or Siracha to taste
  • 6 ounces rice noodles or noodles of your choice. Feel free to use angel hair, vermicelli, spaghetti or even lo-mein noodles.

Optional: veggies of your choice and 

Directions

  1. Preheat a pan or wok and add oil.  Salt and pepper the chicken and stir fry until browned.  
  2. Add onions and garlic and cook for 3 minutes.
  3. Add carrots and celery and cook for 3 minutes.
  4. Add the remaining veggies and cook for 2 minutes, then remove to a bowl.
  5. In the same pan, add the water, oyster and soy sauce and bouillon cube.  Taste for seasoning.
  6. Add the rice noodles and cook quickly in the sauce, about 2 minutes.  Spaghetti and other types of noodles will be to be pre-cooked and less sauce may be required.
  7. When the noodles are cooked, add the veggies back in, stir to combine.  Garnish with sliced green onions if you prefer.  Serve and enjoy!
