CHICKEN THIGHS WITH MANGO BBQ SAUCE
This recipe is a great way to use boneless chicken thighs.
Chicken with Mango Barbecue Sauce
This delicious recipe includes a spice rub for seasoning the chicken thighs. The chicken is then browned and cooked in the sauce. For more asian flavor, add a little extra soy sauce and sriracha to taste.
Ingredients:
- 6 boneless chicken thighs, skin removed. Serve whole pieces or cut into large chunks
- 1/4 cup Extra virgin olive oil or coconut oil
Spice Rub Ingredients:
- 1 teaspoon salt
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon mustard powder
- 1/2 teaspoon lemon pepper
- 1/2 teaspoon cumin
- 1 teaspoon brown sugar
Mango BBQ Sauce Ingredients:
- 4 tablespoons Extra virgin olive oil or coconut oil
- 1 small onion, chopped
- 1 fresh large or 2 small mango, peeled and diced
- 1 or 2 fresh jalapeño peppers or Serrano peppers, chopped and seeds removed
- 1/2 cup water
- 1/3 cup packed brown sugar
- 1/2 cup tablespoons ketchup
- 1 teaspoon low sodium soy sauce
- 1 tablespoon white vinegar
- 2 garlic cloves, minced
- 1 tablespoon yellow mustard
- 1 teaspoon Worcestershire Sauce
Directions:
- Combine spices and coat chicken with the spice rub.
- Preheat a large skillet and heat oil over medium heat. Add chicken; cook five minutes on each side or until or until done. Remove chicken from pan.
- Add onion to pan. Sauté 2 minutes until onion begins to caramelize. Add mango, and peppers and cook 2 minutes.
- Add water, brown sugar, ketchup, mustard, vinegar, garlic. Add to pan and cook for 5 minutes. If sauce becomes too thick, add a little water.
- Return chicken to pan. Cook another 5 minutes or until chicken is thoroughly cooked and coated with the sauce.
Serve this chicken with plain steamed rice, fried rice or coconut milk rice. You can also substitute pork loin cutlets or use the sauce on grilled fish.
