Slow Cooker Taco Chicken

I'm on a journey with Weight Watchers but while on that journey, I want to eat delicious food!  Here's a fantastic and easy recipe which can be prepared in your crock pot for those busy days.  

Taco Chicken is very versatile.  After viewing the recipe, scroll down for suggestions on how to use it.  This dish is low in points and very satisfying, even with the additions.  Happy Pointing!

Slow Cooker Taco Chicken
Serves 8
Weight Watchers Smart Points:  3 per serving

Ingredients:

4 large boneless skinless chicken breasts (or more if using smaller ones.  Basically as many as will fit in your crock pot.  You'll be happy to have extra!
1 package Taco seasoning
1 can Rotel Tomatoes (diced tomatoes with green chilis)
1/2 cup chopped onion

Method:

Combine tomatoes, onion and Taco seasoning in a slow cooker and blend.  Add chicken breasts and swirl around to coat with sauce.

Cover and turn on slow cooker.  Cook on high 3-4 hours or low 5-6 hours.

Remove cover and shred chicken with 2 forks (remove some of the liquid if you like it dryer).  

Enjoy!

How to use Taco chicken:

Taco Chicken Salad:  Make a healthy salad with the following ingredients:

canned Black beans (drained and rinsed)
corn (canned or frozen)
diced fresh tomatoes
diced avocado
salad greens

Dressings:  Picante Sauce makes a great lo-cal dressing and can be combined with a dollop of light sour cream.  Another alternative is taco sauce blended with ranch dressing.

*This makes great grab and go salad jars!  In a large mason jar, add ingredients in this order:

  1. 2-3 tablespoons dressing
  2. 1/3-1/2 cup taco chicken
  3. 1/4-1/2 cup tomatoes
  4. 1/4 cup corn
  5. 1/3 cup black beans
  6. 1/4-1/2 avocado, diced
  7. torn lettuce

Don't pack it too tight.  When ready to eat, just shake it up and pour onto a plate and enjoy!

Chicken Quesadilla:  Add drained taco chicken to one side of a tortilla with cheese, jalepeno and diced tomatoes.  Fold over and heat on a skillet or grill pan.  Yum.

Taco Chicken Mexi Rice:  This can be made in the microwave and is so easy.  Use a package of Mexican Rice mix.  Follow the directions on the package with these additions:  Taco Chicken, corn, frozen peas and carrots.  Microwave according to directions on the package.  This dish is wonderfully satisfying.  Garnish with a little pico de gayo or salsa and enjoy!

Chicken Tacos:  Use you favorite taco shell--crunchy, corn tortillas, flour tortillas or a lettuce leaf.  Add drained taco chicken and your favorite taco toppings such as shredded cheese, tomatoes, pico de gayo, black olives, black beans and top with taco sauce, green chili salsa and/or a dollop of light sour cream.

Chicken Nachos:  On a baking pan, arrange a layer of tortilla chips.  Top with shredded cheddar or queso fresco cheese and bake until the cheese melts.  Remove from oven and top with taco chicken, and a variety of toppings such as picante sauce, tomatoes, jalepenos, olives, corn, avocados, etc.

Taco Chicken Mac n Cheese:  Prepare one pound of small penne pasta (or pasta of your choice).  Add one can of cream of mushroom soup to 2-3 cups of taco chicken with liquid and 1/2 pound of Velveta cheese.  Allow the cheese to melt and then stir in the pasta.  You can serve this right out of the slow cooker!
