 Meyer Lemon Ice Box Pie


    This family favorite is not only delicious, it is so easy and quick to make!  This is my family's favorite and most refreshing dessert when the abundant and sweet Louisiana Meyer lemons!

Ingredients:

  • 1 (9 inch) prepared graham cracker crust
  • 2 (8 ounce) packages cream cheese, softened 
  • 1 (14 ounce) can sweetened condensed milk 
  • 2 Meyer lemons, juiced 
  • 2 teaspoons lemon zest
  • 1 cup whipping cream (or substitute with Cool Whip)

Directions:

  1. In a medium mixing bowl, beat cream cheese until fluffy. 
  2. Add the sweetened condensed milk, lemon juice, 1 teaspoon of lemon zest and mix until smooth. 
  3. Pour the lemon mixture into the prepared crust. 
  4. Refrigerate overnight or at least 2 hours before serving. 
  5. Garnish with dollops of fresh whipped cream and decorate by adding a sprinkling of the remaining lemon zest on each dollop of whipped cream.
